I drilled a hole and put in a set screw to hold the thermistor in. I used RTV to seal the keep in and then took a small drill to the RTV to provide some relief so that when the air heated up, it didn't blow the RTV off or burp.

Well....there is something you can do... You can output the layer # via serial or mod Octoprint to log lines in an overwrite fashion ("last line printed for x"). Also, some of the print server apps are open-source. Some of them log on the interface - so it is not a leap to get it to write ...
