I cannot find this in my configuration.h file anywhere. Is it called something else?

Are you looking for z_max_length in the eeprom?

Its something more along the lines of "Z max length". Should be right next to the X and Y max length variables.

im trying to start over since my printer_radius doesn't seems to effect my calibration much. I thought that if i started over it would not only give me a better understanding but also elliminate the variables. I'm confused because there are a few manuals. One from the reprapwiki and they differ somewhat

You should use the manual you download from the seemecnc site.

Or check recent threads. A V2 is coming.
When on mobile I am brief and may be perceived as an arsl.
