I've also discovered that adding a lot more layer cooling for PLA dramatically improves prints. That said, i didn't want to add a bunch of weight to my print head, so I bought a couple of 4" desktop fans that I point at the bed from 6-12" away. Works great. Right now I'm manually turning them on ...

I have also had the snapping problem with Sainsmart PLA. Too bad because it prints really nice otherwise

My thoughts are there's already enough new stuff going on. You can get a respectably clean print with the stock setup. Get it going with enough spares to keep it going. Once you've got it settled in and have a feel for what's good and not, then start looking at upgrades with a bit of experience ...

There is a great V1 printed enclosure you can work off of for a V2. It only encloses the print area, and some silicone caulk, tape,sugru, etc. will make it sealed for everything except the door which you'll have to think up something for (or use something like sugru). There are spare thermistor ...
