Setting Hot End temp

So how do you set your temp on your hot end? I've been trying different filaments and brands. And I'm able to get my ABS and PLA pretty close to printing well . If I turn my hot end on, and manually feed the filament, how fast should it come out for correct temp? How much pressure is too much?
