Is there some supporting documentation on how to do a step by step install of this option? I'd like to be able to use the V3 as a wifi network printer.

Did you look in my V3 build thread? It actually starts with the RPi and OctoPrint install and then throughout the thread additional info is posted:

Handy write-up for sure. I especially like the EEPROM add-on for reading the values. The auto-cal script doesn't work for me since the directory structure is different for some reason but overall., it helped me get my PI it up and running. Now I just need to find out where to power it without using external micro USB port.

No, I didnt. I used the posted build instructions as that was what was available when I put it together. Does the install allow the printer to be autonomous and not use some external service?

The Raspberry Pi is solely a stand-in replacement for your computer as a printer host. It does not even HAVE to run octoprint. Technically speaking, you could run whatever operating system you want on the Pi, as long as that OS has software which can communicate with the printer.
Octoprint is basically like repetier-host (or more accurately, Repetier-Server) in that it takes the Gcode you feed it, and then it feeds it over USB to the LCD controller, which then proceeds to print the same as if you had started a print in Repetier-Host, MatterControl, or from the SD card. The main difference in Octoprint is that you can connect to Octoprint remotely, which is then going to run your printer locally.

mhackey's write up is awesome, but didn't you see the installation instructions for the Pi that are part of the build?
