Ok, so I'm rebuilding part of my Rostock because I got a bit sloppy with my delta arms and was having some print issues and I figured while I was at it I'd add another extruder.

While dismantling my Rostock I accidentally pulled a lead of my thermistor so I need to order a replacement, but on the website I see two different ones listed (4.7k and 100k). First of all, what's the practical difference, and secondly - which one comes with the stock RostockMAX and add-a-struders? (So I can have matching instead of two different ones).

You want the 100K thermistor. The 4K were used with the H-1 printers.
The practical difference is that the 100K are used with the Rostock Max and 95% of other Reprap printers.
The 4K are found only on the H-1 as far as I know.

I believe that the 100k is the "current" sensor, but you can configure your firmware for either. My understanding is that a thermistor with a higher resistance will return a wider range of values that can equal more accurate/precise measurement.

Which is exactly why you don't see 4K thermistors being used in any Hot Ends that I have seen. Thanks for your better description, it will help others to understand why
100K thermistors are used.
