Steps per mm will depend on your extruder's drive ratio, hobbed roller size, your stepper motor's degrees/step, and your micro step size.
Or you could just guess, then measure the filament it moved, then adjust.

A good way is just to measure (if you can) how much filament is moving out of the extruder with the hot end not installed. Like apache stated.
then adjust the steps accordingly till your measurements are right so if you extrude 10mm, 10mm should be coming out the other end.
generally a geared extruder will have more steps per mm, than a direct drive extruder. like those two examples you posted. That should give you a rough starting point.
