Extruder heat source

I'm currently rewiring my Rostock MAX with EZstruders in a dual extruder setup.
Got the kit with new hotends and all.
I've got some 40W heater cartridges I am planning to use instead of the heating resistors.

Question is if I should put two in each of the hotends?

You should use only one cartridge per Hot End.

What should the configuration be like?

I would lean towards that one also. It really doesn't matter because I would choose whichever one results in the best routing of the wires.
I lean towards the one you did because I think it would look the best to me but it may be that a different one makes the wires easier to
route. Same goes for the thermistor and its wires. Happy building!
