Whats the max Volume per second for stock extruder on the Max V2? I'm sure this differs with material so any info would be great! Thanks!

I don't know that this is a standard specification to rate and compare machines by... The E3D volcano might spec their hot-end this way, but it's kind of a special case. Extruder flow is not a quantity that comes up in conversation very much.

With a non-stock extruder (E3D V6) I've printed .2mm layers at more than 100mm/s with a .4mm nozzle, sooo... math :)

Now I'm curious why you ask. Mind elaborating?

Setting up Repetier Host and it is an editable field. "Max volume per second=###mm^3

Jeez, talk about coincidence! I'm going to a 3d printer meetup tomorrow so tonight I'm figuring out how to really show off the machine, of course the easiest thing to do is crank up the speed!

Well it's easy to make the effector move faster, but lo and behold as I just discovered, the extruder might not want to feed in the filament as fast as is necessary to keep up... ;)

So far I've found that a 0.8mm nozzle with 0.35mm layer height tops out at about 60mm/s. A 0.6mm nozzle with 0.3mm layer height tops out at about 120mm/s. It's not that the extruder motor itself can't move that fast (it certainly can), but for some reason the filament just grinds as much as it feeds if I push things past those speeds at those specs. Maybe the plastic doesn't spend sufficient time in the melt zone, creating too much backpressure? Or maybe it's a torque issue? Both? I can't say.

I think as a practical matter, if you're using a standard-size nozzle or smaller, the extruder's not going to be your limiting factor during printing - which is probably why as Jim said, it's not discussed very often.

I would think that I have to put a number in that is within a window of viability. If I put a number in that is too big will the travel speeds not be too fast and the plastic not able to keep up? And if too low then I am limiting myself with regard to speed....if the quality was adequate?

I think it's a custom "speed limit" that you have the option to set rather than a required field.

It's not custom. It's just a field on the extruder tab.

If you're just looking for something to satisfy RH, start with 999 and work your way down if you think it's a problem later. :)

You can bump into a speed limitation depending on the hot end design as well. That volume of filament going in can cause the temperature to drop or fluctuate wildly as the extruder stops and starts on a complex print. Small details can get blobby because of excessive heat and long spans will get sparse because the heat will drop and the extruder will skip or grind.
